Take out of the oven, and cover each piece liberally in the flour.

When the chips have 20 minutes to go, take each floured piece of seitan and dip into the vegan milk, then cover with breadcrumbs. Return to the baking tray and bake until the bottom is browned, about 5-10 minutes. Flip over, cover each one with marinara sauce and then top with cashew cheese, and bake until the sauces are hot, about 5-10 minutes.

I like to sometimes season the breadcrumbs or cornmeal by adding a finely chopped clove of garlic, a teaspoon of nutritional yeast and 1/2 a teaspoon of kelp flakes.
